Basically it's mimicry of childhood excitement
When a man child opens up his new nintendo or fx takes a picture outside disneyland or what ever is making the soiboi excited, they will mimick the reaction of a child.
I remember as a kid in the 90s a lot of ads and commercials would have kids get what ever new toy was being sold and they would have that over the top reaction.
Also people who are socially inept often like to mimick an emotion instead of showing it naturally. so they mimick this over the top "wow i'm so excited" face that they would now from their childhood.
