You don't have the same level of security if you're just running some nodes in your garage and even if you were going to why would you bother coding the whole lot yourself when you can just fork chainlink code and run that? Chainlink has already monopolized the Oracle space and oracles are incredibly valuable for nearly every aspect of smart contract adoption. The company has also inspired other companies that could only exist with chainlink such as Linkpool which is worth hundreds of millions on it's own already and the network secures billions of dollars in contracts. Your little centralized toaster submitting data onto ETH from your basement could never compete which is really why you wouldn't run your own.
