ALSO VELO is built on Stellar network and just couple days they announced partnership "Velo Labs, Lightnet Group and Visa to develop payment solutions in Asia"

Visa also partnered with Velo to provide crypto credit issuance in SEA utilising the velo token. There are rumbles of a Parsiq partnership maybe this Dec too. We are getting there. Make sure you are holding the tokens actually making it.
You get taxed on crypto to crypto.. When you trade whatever crypto for your USDC you owe taxes on that.

So they'll only see what I do on Coinbase. So can I just report all the Ethereum I bought on coinbase (my on ramp) versus whatever I cashed out? Will that suffice?

Seeing your coinbase -> metamask or whatever uniswap wallet -> all your uniswap transactions would be fairly trivial, but yeah it's not reported directly.
Make your move based on that. If they decide to give all of your wallet interactions a colonoscopy, you're probs fucked.
