Why Europeans don't know how to make wine, cheese, cure meat, etc? I mean, they know how to do it, but their results are shit. All the other countries (with the exception of Japan) drown their flavors in spices because their raw material is shit.
Also why only Italian, Spanish and specially high cuisine French chefs are truly revolutionary?

Last time i checked austrian wine is renowned for its quality while italy and france are mostly quantity. Sure there are still some good ones but most of it is made for export or tourists. Also people dont like anti freeze in their wine so some frog can make more profit

Here in America we have a lot of chefs that were educated in France, and then use that classic training to make ethnic food. It's especially interesting when the chef has multiple influences, for example, a Korean American chef who lives near the Mexican border.
What does a Spanish diet consist of, mostly. On this continent were very meat heavy, with some bread and vegetables thrown in.
We actually make a fair bit and its reasonable quality generally, its also hardly taxed at all so you can get a awful bottle for about 2USD.

For example: Many recipes and techniques changed to cater to the tastes of people from outside the culture, cutting ham was never this flashy but since it got demand a whole sector was built around it, and paella has barely anything to do with the original recipe, even in specific regions, or how many times have they told you that chinese have 2 foods, one to sell to foreigners as traditional and one that is actually for them?(and you know the rumour that chinese restaurants have 2 menus).
The sad part is not necesarily that mediterranean food is actually good, is that countries around the mediterrenaean have so little in terms of industrial and technological productivity that the only thing they can do is whore around their culture for tourists, so excuse me if I don't want to feel very proud of my own culture for the same reason I can't be proud of my daughter selling her body to strangers for pennies, specially in the case of Spain with his imperial history.
