Water? Haul it in or dig a well
Internet? This might be a bit harder, have to move somewhere that has satellite or line of sight wireless or good cell towers. There will be more people in these areas unfortunately

I think it depends on how much money you have and want to spend

My grandparents have a hut like this in the alps for vacation (tho not really remote, Austria is small... it’s a few hundred meters from a tiny village)
After my graduation I spend around 6 month there
I didn’t grow my own food nor did I went hunting
Bough most of my stuff from local farmers and hunter
The only thing I did by myself was getting wood from our forest for heating

I spend around 70€ for utilities, like electricity water and tax a month
And 200€ for food and household articles
A house like this with some forest costs maybe around 200k-300k€ when you’re not near a ski resort
With insurance and credit cost, you probably would pay around 1500€ a month for the first 15 years and after payed off 500€ a month to live like this
