Because there is a certain parameter for what is believable in fiction. Of course there are anachronisms and mistakes, but generally when a production is intending to represent a moment in history or something akin to the real world, the conceit is that it is intending to represent reality.
There are degrees to this that are acceptable, like you wouldn't call something a pirate game, and have Godzilla and astronauts, Because it would not be believable for the setting.

Representation is only important in relation to what it brings to the media piece. Narratives are not like the real world, in narratives everything has a reason so if diversity can bring something to a plot, the art design, or the way the story is told then it´s welcomed. Otherwise it shouldn´t be relevant... though i mean this in the good sense, want a character to be gay or black or latin or whatever, do it, but don´t call attention to it unless it´s relevant to the plot or the character.

Depending on the setting, tokens characters ruin the immersion. If I'm playing a viking raider during the IXe century in Northumbria I won't be pleased to see black or asian nor to see that the people consider that homosexuality is perfectly normal.
