His death was the most ambiguous of the three in the original anyway, they really could have done anything to him in the remake and it would have been okay. Aerith was tending to him when he fell before she went to get Marlene which she was able to do and transport her to Sector 5 by helicopter all before the plate fell. It's very possible he would have been able to get away whether the guards opened the escape route or not

That's not how it works. Killing the time jannies didn't rewrite time. Zack didn't come back to life at the end. He was alive the whole time because the jannies died in the future and so time was already determined to have strayed off the course they thought it was on.

Remember the line Aerith says before the Whispers fight, along the lines of "this will even change ourselves". It means she fully expected killing the Whispers would retroactively change stuff on their own timeline. Expect Cloud slowly realizing he is not who he was anymore, starting to remember a different arrival to Midgar, and Zack showing up one way or another throughout the next games.

When they describe the time janitor stuff, they say that the course of the Lifestream is already determined, and so the time janitors are there to keep it in check. What they're saying is that the future already exists simultaneously with the past and that the planet is just moving 4-dimensionally on that flow.
But the flow obviously is not going where the janitors think it is, because the future is changed. That means the future was always going to be different, which means the past was always in place to arrange for that future. Time didn't need to be rewritten to save Zack and Biggs. They were just always alive because the future had already deemed it to be.
