Learn to Defensive Offensive his charging attacks and parry, his throwing scrapes gimmick is optional (run straight forward to evade it) and should give you a greater advantage.

Also don't forget to lock-on. I've seen countless playthroughs of people not knowing you can lock on a target and are just attacking the air while struggling with the camera.

1: Use dodge slash and never parry
2: Get generous healing items every time you cut the thrown debris
It's an easy fight once you learn how to do the cuts and stop trying to parry

What difficulty are you playing on?
I remember my first time trying this fight was on the second hardest difficulty option (which is actually the real hardest difficulty) and it took me like 2 - 2.5 hours because I never upgraded Sam's sword.
