Well we know the absorbing souls makes you bigger and stronger or something to that sort. Smough was a cannibal so we know he was getting a lot of that. Artorias was just a super strong knight who probably had much more battles than Ornstein could have ever had. Or it could have just been for the aesthetic of big slow and small fast boss fight parallel for either designs.
