I think the whole ringed city lore is mediocre and doesn't add anything meaningful to the story. Now I liked some things like nameless king, but in general I feel like ds1 lore is better alone than with the sequels. The idea that the world is cyclical and your actions at the end don't really matter is a good concept, but what it turned out to mean was that while it didn't matter, that's ok because the world is exactly the same and everyone's fine.
I never felt like I needed to understand the nature of the flame or whatever, past it just being a magic fire full of souls. I think ds3 went too hard with the idea that gwyn was actually just either stupid or evil, and that there was one easy solution where you could just let the flame out and it'd come back and everything would be ok. I think it was better when the end of ds1 didn't matter because neither end was really good, rather than it not mattering because neither had an impact.

I think "self-sacrifice to keep the age of the gods he struggled so hard to create and maintain" is neither stupid nor evil. He must have thought he was doing a genuinely good thing.

Even Gods fear death and the dark. Nobody wants to just "lay down, shut the lights off and go to sleep/die" when they feel there is more to be done.
I think it reflects nicely in the nature of people in a very simple way - say you stay up all night doing something you think is worthwhile, don't get enough sleep and feel dreadfully tired and "hollow" and regret not resting in the dark like you should have. I believe something simple like this MIGHT BE how Miyazaki came up with the nature of the universe to begin with. As you keep staying up and refusing to sleep, you begin to hallucinate, feel groggier and more awful, snap violently at your peers and etc. It's possible that living with the "flame lit" for too long is akin to insomnia.
As of Dark Souls 3, the flame itself refuses to go out and will revive old kindling to try and light itself.
I do believe Dark Souls 3's lore is a lot messier but the themes and symbolism present in it are fucking excellent.

I think the age of the ancients/grey was a result of the dragons killing anyone with souls. It's possible that without the dragons to eradicate soul-bearers there won't be another age of grey again.

Dark souls universe has little in common with reality. Humans are naturally wrinkly, gross immortal zombies that shamble around in the dark in the Dark Souls universe.

Hollows predate Gwyn.
Gwyn likely used to be a hollow too, but discovered a Lord soul, which explains why he appears hollow when you fight him at the end of the game.

When the first flame is lit: integrity, purpose, and logic flow forward and create time. The sun exists and rises and sets.
When the flame dies out, the world enters an age of dark, stillness, time ceases to exist.

Gwynn is hollow because he burned out his essence when he linked the First Flame. That's what Linking the Fire was, he Linked the fire to the Dark of humanity, burning them out for fuel when they "die" to extend its dwindling power with a renewable fuel source.
