PC are for work, I have a mac anyway, and even if I was willing to invest in PC gaming, is still more cost efficient to just buy a console (Either Nintendo or Sony) and enjoy the games without bothering with settings and such. Is not like I care for resolution and framerates all that much. Didn't matter in the 90s and they still don't matter today.

First of all, that is only true at the very beginning of a console generation - if that. For instance, the PS4/XBOne are powered by pre-Ryzen APUs pretty much. However, you probably also need to own a PC anyway for other reasons. Thus, even if we're totally focusing on that kind of value (which is far from a good argument), you could spend that $500 upgrading your PC and getting all the benefits of PC gaming as well as better specs and value.

If I buy a PS4 for $300 right now I can play a hell of a lot more modern games without lag than if I bought a $300 PC.

There's no way a $300 PC could play a latest release game like FFVIIR without lag and would probably struggle with DS3 and even Skyrim.

That's basically it though.

I never have to fiddle with graphics settings for an hour or more to get the balance between fps and quality "just right" on a console.

There are different levels of ownership, and console games only qualify for the lowest tiers of ownership.
It's only recently that it's become easy/possible to truly own a lot of console games, thanks to romhacking becoming more accessible, and SM64 getting decompiled and rewritten.

The difference between "owning" something and truly owning something is not merely academic. When you only "own" a game, you play it through a few times; you'll be forced to buy the sequel for more content, and rebuy the base game every generation if you want to play it on new hardware.
When it's possible to truly Own the game, you get community created content for infinite replayability, you get randomizers, practice patches, mods.
Console manufacturers hate the latter, because it means they cannot milk the consumers endlessly.

GPU - 1660Ti / 2060 Super / 5700 / 5700XT , all of which are way more powerful than current gen hardware. When the NV 3000 series and AMD RDNA2 series releases later this year, there will be an even larger step forward
RAM - Adding another 8GB (for a total of 16GB) or if necessary a full 16GB RAM kit.
SSD - Wide array of SATA or NVMe SSDs for your OS and game storage.

Depending on what you have to start with, those kinds of upgrades can all be had for $500 (if you're particular about waiting for deals or buying/trading components from enthusiast hardware communities you can get even more for your money) and give you a much better experience than a console in terms of performance.
