Why is DS3 a bad souls game? I think it’s pretty good.
DS2 on the other hand I thought was way better than DS1 mechanically but the levels and enemies felt rushed. Wouldn’t that make it a good game but bad souls game?

Dark Souls 2 would have been better if it weren't a souls game, especially since it was Dark Souls first sequel- there's so much missed potential and a lot of good ideas muddled with so many shit ones and beautiful areas and atmospheres that feel dead. The DLCs are top tier though aside from that one fight in the first one that's just 3 overtuned NPCs that are a slog to kill in NG+

It's more that Dark Souls 2 is more of a sequel to Demon's Souls than Dark.
DS3 has three big problems
1) Linear world with no inter-connectiveness, not even progression skips. This makes everyone's playthrough identical and kills off replayability. Considering this is one of the most praised aspects of DS1, there's basically no reason except extreme incompetence that this wasn't a focus of DS3.
2) Spell builds are trash. Spells do weak damage and get most of their damage via wasting ring slots instead of stat investment. This invalidates certain stats for 80% of a playthrough, a problem exacerbated by the above problem where multiple playthroughs got old and tired very quickly.
3) The combat is, for the most part, trash. Even if you get used to it, there's no shaking the feeling that you are fighting Bloodborne enemies with a player character that doesn't have the tools to deal with them. Some enemies will have long strings of combos that they just spam like Lisa Simpson, waiting for you to get hit - then, they will arbitrarily be able to cancel them, ruining a core mechanic of the original DS1 which rewarded you for memorising an enemy's moveset and exploiting it. At some point this broken combat was slapdash "solved" by giving the player the ability to roll forever, and they called it a day despite this also ruining combat further because it doesn't solve the spammy nature of enemies and ruined PvP in the process. PvP revolves around spamming R1 or using a broken Weapon Art, with nothing in between those two extremes being suicide to even bother to attempt
4) It's cowardly. What I mean by this, is that it doesn't have the courage to do anything interesting or impactful like Demon's Souls or even Dark Souls. Ideas like Yurt endangering your NPCs, Soul Drain, permanent NPC death are constantly removed or dialled back wherever possible. It continued the trend of each game in the series being more forgiving of player mistakes, making it more homogenous with other RPGs and you feel less investment in your actions.

DS2 and DS3 both have big problems stemming from overambition. They both want DS1 plus the kitchen sink in there, ignoring the fact that DS1 itself was too ambitious for Fromsoft to execute it at a consistent level of quality, and they both have a bunch of super incestuous "quality of life" shit streamlining and "balancing" the perceived flaws of DS1 and introducing nine thousand new flaws while they're at it.
DS3 is by far the better game, but it's tedious to replay because most builds are not good and there's only two or three (minor) branch points throughout the game, everything feels pretty much the same every time unless you're purposely gimping yourself.
DS2 is less tedious to replay in a sense because it does give you more genuine options about progression and development, but unfortunately for you, all of them feel like wet dogshit!
DeS and DS1 are way superior games to both. So are Bloodborne and Sekiro for that matter.
