CK2 has perhaps widest appeal of all historical Paradox games, there isn't really a wrong way to play it and you can both treat it as a wargame of map painting or just as a medieval dynasty sandbox to fuck around with.
Also if you have just a bit of patience to plan marriages and claims it's ridiculously easy.
