There is the GMDX mod, which is a fine modernisation of the game. Also you can do a lot of things differently which can have a pretty big consequenses too. You can kill characters earlier, save characters that died in your last run, complete objectives in a completely different way.

Going pacifist doesn't really matter after a while. It might feel like an extra challenge at first but headshot except you have to aim for the neck because lol hitboxes with a prod will knock everyone out with a single charge so it's not too difficult either. Also you have to kill Navarre at the very least unless you use glitches.

What was your original build? Heavy weapons or explosives could be fun, rifles are alright too, plasma is hot garbage, melee is interesting.

pacifist is completely meaningless except for this bit in the beginning where carter refuses you a small amount of assault rifle ammo if you've been killing people thus far. The crossbow is aids don't let anyone tell you otherwise by the way. You could spice things up with a melee only run if you want, ranged weapons like the pistol trivialize the game hard.

i just went stealth pistol and sniper, had a lot of fun with it. Enjoyed the urban areas in the early game more personally, but the end game was fun too.

Yeah, kill the agents who storm the apartment, and then go to the lobby and kill all the bad guys. If you just kill the agents and exit via window without killing guards in the lobby, it will count as Paul getting killed.
