A walking simulator is still more of a game than a AAA, mo-caped slog, with hours of cutscenes. For instance Outlast 1 very rarely takes control away from the player.

I just get bored like a third of the way through. I know the story is supposed to scare or interest me, but there's noting to fucking do but stare at the scenery or stay crouched behind a box and wait for the moment I'm supposed to book it to the door.

On topic, I actually feel your pain OP. I used to enjoy some of these games because I could take them as a playable horror movie, but I just get bored now. If you haven't bothered to implement interesting mechanics, I doubt you've bothered with interesting scares, either. I don't consider Alien Isolation to be part of this group, but it can sometimes slip into hide and seek tedium.
Play The Evil Within 1 and 2, Lost in Vivo, Darkwood, Dead Space, STALKER, Dying Light and whatever old proper survival horror games from the PS1/2 days.

I've done The Evil Within 1/2 and all the Deadspace games. They're fantastic, especially Dead Space. That's the pinnacle of survival horror imo. Having guns and ammo don't mean shit to some enemies and that's what's terrifying. Games where you just some random schmuck running away from another random schmuck with an axe or some other such dumb shit gets old quick. As for Alien Isolation, like you said, it does slip into hide and seek. I got bored around the point where I was supposed to "trap" the alien for like the 3rd time. Or 2nd.

I could watch a let's play over it possibly in the background because I'm not playing. As soon as I have to sit down and "play" these games, I get taken out of it and it becomes a fucking long road of UGH IS IT ALMOST OVER? But I understand wanting to know everything about the world. If it's a lower tooth, the softness of the gums don't hurt as much.
Whenever I see pic like OP, I can feel the pain of the dentist drilling my front tooth all over again. It cracked when I hit cement.
