I would say the artstyle adds to the atmosphere, it's gross and messy just like the world and overall tone of the game

Minecraft worked because even after they added the survival mechanisms, it still mainly was a creative game to build stuff. whereas every game afterwards has crafting mechanics that just allow you to build a shit tier hut to stay in for a few minutes until you go out into an annoying world again that looks straight out of a PS2 game

I think a lot of it is just lack of understanding game design.
They look at other games where X worked and was fun and then decide to include X without thinking about the overall feel of the game.
