I rather like grimrock 1, not a fan of 2. Wizardry 8 is probably the golden standard.

I really enjoyed paper sorcerer, pirate it though, the dev basically disappeared and fucked everyone out of an update he promised, plus unlocking the kickstarter backer summons for everyone.

Just didn't feel quite as good in the main scenario. It didn't feel like a dungeon crawler. I also didn't like stuff like digging.

Etrian Odyssey, Dark Spire, Grimrock 1 or 2. The first couple Megami Tensei games.
