Took me about 50 tries, but was the most exciting final boss I've ever faced in a video game.
I think O&S probably gave me the most trouble of any video game boss ever. I never finished ds2 or 3 though

Honestly I like Sans' fight more than Undyne's.
Sans just tests your reflexes like a platformer.
Undyne actively tries to trick you with all her arrows coming different directions and those godforsaken yellow arrows that go circle around and hit you from the opposite side.

I don't have that good a memory when it comes to past vidya, so I'll go with Sekiro's last boss.
This game was overall kinda hard but I never got to face Demifiend.
There might be a harder one that I'm forgetting but Deko is my kneejerk answer.

In the main game he is a challenge but dealable
In Sam's DLC on Revengence keeping him taunted all the time he is a killer

Absolute Radiance on Radiant took me about two weeks to beat.
Probably day 49 of Lobotomy Corporation.
Without looking shit up and doing that on your own is practically impossible. Took me maybe 4 solid hours of trying and then I was left with a single agent alive at the end.

Never beat him. I got him to like 2% of his HP a few times but the last final hits always get me killed. I hate him so much.
No matter what build you have, what level you are, you NEVER DO ANY DAMAGE TO HIM EVER. Fuck this. Every other Souls boss actually takes damage from the player but Orphan has like 349234829384 billion HP for no good reason.
Jevil is kind of a joke though, no pun intended. All his attacks appear in the same order every time, every single attack has a predetermined rule that makes them super trivial to dodge if you learn about them, only one of his attacks is truly random but even then it's just a matter of dodging in time, and he is actually pretty slow compared to even most casual bullet-hell games.
