You have various options of varying difficulty of implementation.
>split into several smaller slimes that have less HP so it can fit into smaller spaces or do special things.
>change element based on external contact
>take control of hollow elements by slipping inside kinda like possession but for inanimate objects

Depends on the slime.
Some slimes slide around, some are sticky. Some absorb foes and objects, others use their flexible slime body to dodge attacks and bounce like a rubber ball. Some slimes transform, e.g. it'll morph part of itself into a mallet to hit stuff.
Some slimes are elemental, and take on characteristics of the environment, or regen if they come in contact with water/liquid. Defensively, slimes usually are affected more by magic.

Yeah, eating/absorbing is pretty central to slimes. Rather than having it be too much like Kirby you could have it be a more gradual effect, i.e. the more metal you eat the more metal-slime like you become with associated benefits and penalties.
You could have varying movement types too from basic crawling and squeezing through small gaps to slithering up walls and across ceilings and even bouncy jumping, all interacting with the different evolutions.
So going back to the metal slime it'd be one of the strongest forms but so heavy that jumping and climbing is troublesome.
Other elements could include general growth from eating and even splitting to creat companions or respawn points. Enemies could vary from tiny insects on to animals, other monsters, and even humanoid adventurers. This could also allow for puzzle/stealth elements of sneaking around powerful adventurers through your unique movement options and trying use the surrounding monsters and traps to weaken them.
You could even reward different gameplay styles by having live food give some extra bonus to offset the increased risk versus leading them to their deaths and eating the corpse.

Yeah, he still uses the slime as a "relaxed" form and I can understand using the human shape for interacting with humanoids but he can also take any shape he has absorbed including presumably the goddamn dragon so it's kinda silly to use the little girl form in combat.

He can freeze himself into a solid, heat himself to scalding temperature creating fumes and/or touching enemies to burn them.

I swore an user threw their demo for a 3D platformer where you play a slime rolling really fast and swing on things by latching onto them.

See I like these ideas but all at once is a bit much which is why I like the idea of eating enemies to build up certain traits with multiple options on how to overcome obstacles.
Eat firey enemies to gain resistance, then immunity to heat and finally the ability to start your own fires. Likewise for acid and other elements with potential for combinations.
You could have "possessing" enemies as an option for bigger enemies when you're a small slime, maybe at first just disorienting and slowly suffocating them but leveling up to guiding them to stumble into enemies and traps while swinging their weapon wildly and finally assuming direct control. Conversely if you make your slime big enough then you can swallow smaller creatures whole with progression letting you swallow things closer to your size and reducing their ability to struggle to delay being absorbed.

I got bored of it after all his allies were like "Rimuru-Sama!!!" for the 15th time. Up till the King Orc arc was still great though.
