I think I've heard Dark Souls 3 has marriage with an NPC but I'm looking stuff about it and it doesn't' seem like actual marriage but a ritual about killing a spouse so that NPC becomes your spouse.

Could you tell me what actually happens in that scene and why you're getting married to Anri? I can't find anything, the wiki says "If you follow X character path" but then it seems Anri doesn't appear again.

It's a religious ceremony they don't got to explain shit. You kill her under certain conditions and you get a dark sigil, getting you closer to being the lord of hollows. Maybe she was a chosen one of the church of Londor or she was annointed or a candidate or whatever, just go with the flow. If you start asking questions about all the weird shit that happens in these games for apparently no reason you'll never finish.

She appears in the dark lord ending. Her last in-game appearance is in the matrimony ceremony (sword impaling). The creepy cult of dark age people like the idea of two undead swearing an oath of marriage with this act. The curse of undead (never dying) is never solved in the dark age ending route so Anri, yourself and any undead are all alive in that ending. It's Dark Souls answer for its many cathedrals levels in an edgy kind of way.

the closest thing you're looking for is maybe the Fire Keeper in 3, there's no romance or anything, she's just a prominent character and helps you level up
that being said if you want some tag-along girl character then you won't find anything like that in any of the games
