1. You're not done with the game. Head back to Gran Soren.
2. Mage is literally the worst vocation, you kinda fucked yourself there.
3. The person Grigori uses for the decision depends on who has the most affection for you (if you talked to them a lot or gave them something); if you didn't gun for anybody in particular then getting a literal who like that is completely feasible.

There's 9 vocations, user. The three you start with are the most basic. There's advanced and mixed vocations. Try switching to Sorcerer or Magick Archer when you play it next time.

There's 4 magical classes. Mages are the weakest offensively, they have mostly support magic like heals, traps, and imbuing elements into the party's weapons.

fuck that explains why i found weapons like maces that my pawn couldn't use even though he's a fighter

The fat guy is probably ser Maximillian, it happened to me my first playthrough and I was equally confused.
He gives you all the early game quests so you have high affinity for him I guess.

You don't assign points when you level, but your stats will grow according to whatever vocation you are when you level up.
Character level is universal, you level the vocations separately. In addition, you active vocation when leveling up informs your stat boosts slightly, so playing the whole game as a Mage has lead to a lot of Magic stat boosts but comparatively few Strength ones. The level cap is 200 though, and gear makes up the majority of your final stat total, so you're not fucked.
Go to the Inn and change your vocation, the other 6 unlocked when you hit Level 10. Pawns can use the Advanced vocations but not the Mixed ones (so they can be a Warrior, Sorcerer, or Ranger, but not a Mystic Knight, Magick Archer, or Assassin).
Same shit happened to me. I've only had Mercedes since though. I can't bring myself to let her story end on such a sad note. Having her stay in Cassardis, a quiet town where she will be appreciated and can improve her skills at her own pace, instead of shipping herself back to a country where not even her father respects her is just the right thing to do. Of course I Dragonforged her sword and gifted it back to her after giving her the Hot Arisen Dick.

Id almost recomend starting over, doing the everfall stuff can be an absolute pain in the ass the first time, more so if you did not spread your stat grow a bit

I mean, Fighter & Strider are pretty viable in their own way (Strider is better than most non-Basics honestly), it's just Mage that isn't great.
