After you clear the rooftop beware the Black Knight. You can fight him if you're feeling confident and you'll get a defense ring out of it but you can ignore him too
Make sure to buy the house key from the vendor nearby where you are. There's a weapon buff item and a shield in it for you if you get it

I got the master key at the start since I thought it would lead to to more loot but I managed to yeet a spider boss in a swamp place and everything else is hitting really hard

Taurus Demon literally can't hit you if you stay with your face in his crotch. The biggest mistake newbies make at Souls is thinking that distance = safety.
An underlying message in souls is that anyone can make it. Keep grinding at it.
I can manage to get to the point where the knight is with most of my health, but the spearmen lynch me every time. And the few times I managed to defeat them I got wrecked by the Black Knight. And yes, I know how to kick.
The most important thing you should be doing is leveling resistance so you don’t get screwed in later areas and have to scrap your character and start over. The rule is level resistance for every time you level up your main stats. For example if you you are doing a dex build, every time you put a point in to dex alternate by leveling resistance. You’ll want to be at least 20 resistance before you get to blight town. Grind for souls if necessary.
I mean, you can simply run past the spearmen. They move slow as fuck. They're also very easy to parry.

That's slightly overkill. 1 RES for every 2 other stat points is usually sufficient to survive the late game.

Dude you should not be trying to fight multiple opponents when you're still finding your legs. Kill off all the hollows, make sure to get the one up the stairs on the guard tower, and when the area is clear then make your decision to engage the Black Knight

What do I do? I took out the spearmen but health is low and I don't even know how far the next bonfire is. Should I play it safe and go back to the bonfire?
If it makes you feel better, I played with a trainer/infinite health and still couldn't figure out where to go/what to do. Never beat it.

Black knights are optional my dude, he's guarding a shitty ring that increases your defense when health is low. If you really want it then you can run past him to suicide for it but I'd recommend coming back when you're better at parrying and have better weapons
Run up the stairs along the wall and climb the tower. Then go out through the white fog wall and run across the top of the wall.

This but be careful going up the stairs if you go too slow hollows will ambushes from behind so run to the top quickly
Keep trying until it clicks. Watch a playthrough a see how people go through that area might get you a feel of the game that you'll be able to replicate. It's really not that hard.

Pay attention and if when you open a door it mentions using the master key, you know it's not the way you're supposed to go. Might still be worth taking a look, potentially you can get good equipment and such early by going those ways, but enemies will likely be too powerful for you and it probably won't lead to progressing through the game regardless.
You don't have to battle everything. You keep items you pick up even when you die. By all means just rush to boss arena instead of rebattling everything every time.
Leveling health/stamina until softcaps will make game more pleasant to you.
