That was the whole basis of the game, the gang slowly coming to the realization that its over. Their world, their way of life, etc. Different characters had different points of reaching that point, but Dutch kept the delusion alive all the way until the end.

They can create a brand new story and still call it RDR3- it doesn't have to follow the story of the first two games. GTA has been going on for decades with barely any connection between them using new settings, story and characters.
