Sonic Fever. Literally Mania 2 with all original zones and a plot on the level of 3&K. Amy is now playable. New moves for non-Sonic characters to make them more interesting. Ring system is overhauled.

Full AAA remake of Sonic Adventure. Level designs are brand new but will feature recognizable setpieces. Each character's gameplay is fleshed out to be fun, even Big somehow, but keep Sonic mostly the same. Tighten the story a bit and give the characters who seemed a bit aimless something important to do. The tone is the same as the original, fun and adventurous without being afraid to get dark or serious. The script has to be the same between the English and Japanese versions so none of that totally radical bullshit. More levels in general would be good too, especially for Sonic. Maybe have bonus levels after the game is finished to give the player more levels to fuck around with Sonic in. Maybe that's DLC because we live in the jew age.
Also include Chao Garden and make it the best it's ever been. More ways to crossbreed Chao, more colors, more types for them to evolve into, more character Chao, etc. Totally revamp Chao Races to make them more fun to play. Also include the ability to send a Chao to your phone, where you can raise it from there, send it to a friend's phone, or trade it. No microtransactions.
The game is very polished, a work of love that respects the original, not full of glitches, and even people who hate Adventure admit it fixed a lot of problems. It is considered the best 3D Sonic game of all time and people have spirited debates as to if it's the best Sonic game of all time.
Then after you 100% the game, you get a teaser saying Adventure 2 is next, and you get to play the City Escape from the upcoming remake which does the same kind of revamping for Adventure 2 instead.

If i can only do one i would make sonic adventure 3 but im not sure whether i should call it adventure 3, obviously this would have adventure gameplay but i think there should be more opputunity for shortcuts and secrets or even just multiple pathways, we would have sonic and shadow gameplay,which plays out normally most of the time but every once in awhile you can work together with a character to expand on sonic and shadows abilities. tails gameplay which has him racing sonic like in adventure 1 but in his own versions of sonic stages and with some kind of ability related to his technological prowess, knuckles gameplay except every level is as big and expansive as pumpkin hill or meteor herd, and finally i think that eggman should be playable in a better version of the mech stages, i dont know much about the actual producers of the games but for those i would bring back the would be, Shiro Meakawa as the lead writer and Jun Senoue as the lead music artist, i would also bring back Yuji uekawa for his artwork, i would like the story to involve metal sonic as a major villain, and i would like there to be about as much content as adventure 2 so that while there is a lot to do, it isn't a chore

Design a 3D Sonic game where you can play as Sonic, Tails or Knuckles all in the same stages. Each one has their own perks that allow them to get to special areas the others can't.

Also maybe you could unlock Amy after a first playthrough. I'd imagine she could do everything and be just a fun "blast through everything" type of character who can do everything the others can (duck under ceilings, hammer jump up to areas only Tails could access, smash through walls with her hammer).
The entire game is in a classic style as well.

Sonic Adventure 3. Story mode has Sonic, Knuckles, and Tails levels with their SA2 playstyles for the most part. and a secret story mode after you beat the game that unlocks a series of Metal Sonic levels.
Story involves Eggman reviving Metal Sonic and having some evil plot, but things get out of control when Eggman's new Super Metal Sonic goes out of control and Metal Sonic and Sonic have to team up to beat it.

I would have the Mania team make “Shadow Mania”. Same art style as Genesis games but playable characters are Shadow and Rouge. Let them go as crazy as they want with the gameplay while keeping it a platformer where you run from start to finish.
I make a 4K remaster of Shadow.
Port SRB2 to new consoles with more levels, and 3d low poly models with good animations. Music by Tee Lopes. Integrate new online modes like battle and kart racing mods. Maybe recreate some old school levels. That's it.

There will be eight or so zones. Each comprised of several acts and one Adventure Field.
The Adventure Field isn't quite like it was in Sonic Adventure. Rather, it's a stage in its own right. A physics playground for the player to explore to find the entrances to each act and other goals, like trapped animals or special stages or other side quests.
The acts are more linear stages, get from point A to point B. But they're designed in such a way as to encourage different ways to get through with the different characters. Tails and Knuckles can take shortcuts, but Sonic's natural speed lets him maneuver through detours and around obstacles with minimal setbacks. For example, you come to a cliff that blocks progress. If you've maintained your speed, you can take a ramp and dash up the side. But if you came up slowly, you'll have to take the slower path climbing a series of platforms. They'll be relatively short, capable of being beaten in a few minutes if you know what you're doing, but much longer if you don't keep the flow going and maintain your momentum. Also, they'll be more boxed in with unclimbable walls, instead of mostly being bottomless pit fests. Falling means taking a slower, more dangerous route, not instant death. Just like the old games.
Each area has a boss fight with Eggman, and a way to access the special stages and Chao Garden, which would work EXACTLY like the adventure games, but with more features, and a new "Chao Quest" game replacing Karate. Your chao go on an RPG adventure, and their stats determine how well they'll fight.
Maybe unlock other characters as extra bonuses. But I'd rather focus on nailing the original three in 3D before moving on to thinks like Amy, Cream, Mighty, Ray, the Chaotix, Shadow, Rouge, Omega, Big etc....
