i mean there's a reason why eastwood westerns and kurosawa samurai films go together nicely. Strong individualists, legendary fighters, and the climactic duel is almost exactly the same for revolvers and swords in the thematic sense. Skilled warriors facing off with their preferred weapons, the anticipation and analysis of intent, and the culminating single, nigh-instantaneous move that leaves one or both men dead.

The Assassin's Creed take on the 1700s was utterly fantastic.
If only the gameplay itself was good.

Melee weapons were obsolete by the time the wild west rolled around, and soulsborne games only work with melee weapons

Imagine combining procedural generation like the chalice dungeons were meant to have with an open world like Elden Ring will have. An entire continent of ever changing ruins that you have to ride on horseback through. Literally that one creepy pasta about the beta OoT world being infinite made real.

Wild West and wizards is probably the closest that comes to that definition. more of a shooter though and no "soulsborne" mechanics.
