final fantasy xii has a lot of rare enemies. the level 99 red chocobo is the rarest that I know of

I think Munchlax was the last asshole encounter in the series, later games are far more reasonable
I don't miss the safari zone either, even with the infinite encounters it's still a bitch
In a cataclysm zone, Deepholm, in WoW, there are 2 rare mobs that share a spawn that is on a multiple hour long timer. 1/10 times it spawns the one people want, that drops a mount, but this mob is large, flies around and sticks around until killed, so despite spawning less often it ends up being more common to spot.
The one that is actually rare to come across is the one that spawns when the desirable one doesn't. A shitty, small level 15 bat, that you have to be close to to see and it despawns after a couple of minutes. There's no merit in coming across it besides knowing roughly when the next spawn will be. So most of the time this thing spawns and you won't even know about it spawning and you sit there for nothing as the spawn timer restarts.
A lot of the rare mobs have batshit insane spawning conditions. One requires you to just stay in one room for eight minutes straight.
i saw some Nelf kill the time lost proto drake in front of me, wasn't even aware it was right above me or how valuable of a find it was until i saw him fly off with a brand new mount.

Never saw one in 300 hours so I'm going to say this. But I'm sure there are MMOs out there with more abusive spawn rates. I remember Phantasy Star Online got egregious with this shit.
an interesting fact about the bat is it was originally in a vanilla dungeon called shadowfang keep which got redone in cata and they put the bat in deepholm as an alternate to aeonaxx spawn for whatever reason
