If you're not trolling, then fire gem saw cleaver is amazing with high ARC.
Otherwise, get up to 40/40 STR/DEX and just get a ludwigs. you'll thank me later ;)

No I watched my friend play (and played for like 30 minutes) and saw cleaver seems better than the other two. Cane is weak and axe is slow.

nah, that thing has shit output relatively. It's aesthetic but no good.

Ludwig's isnt one of the three starting weapons. You can buy it from the hunters dream like 1/3 into the game for like 20,000 blood echoes. It's really good.
But among the 3 starters, I like saw cleaver the most although hunter axe's two handed mode is quite delicious as well.
bloodtinge affects your firearm damage and a very small number of melee weapons, such as the Chikage and Bloodletter. Like the other user said, it's an advanced build. If you invest too much into bloodtinge too early, you won't do enough damage against early game bosses.
same goes for arcane. there are good viable str/arc hybrids, but even for those you'll want to level str first.
you can do whatever you want, but early game just try to focus on HP, stamina, and one of STR/DEX. Saw Cleaver scales with STR better than DEX, btw.

Bloodletter for quadruple digit IQ

It's in the Old Hunters, the DLC, if you own it anyway. (It's good.)
If you do have it, you're not quite there yet. The DLC is hard, btw. You might want to play through the base game first to get a feel for the game.

It's mostly early game. Most players will struggle with Gascoigne to some extent, and would pretty often run out of bullets/vials.

No you can do it on NG. In fact do it on NG because it's easier than if you do it on NG+.
One option is, you can do it right after you clear the last boss of the "Nightmare of Mensis" area. If you beat the final boss of the base game though you'll automatically be sent to NG+, it's not like Dark Souls 3 where you can choose when to go to NG+.

Go 25/25 STR/ARC then raise both to 50, you can add S STR/ARC scaling gems to any weapon later in the game so you won't have to worry about weapon choice. Also some SKL for weapon req, but no more than 25. Never put more than 50 points in any stat.

Guns are pointless, even the strongest one that takes 80% of your bullets for one shot only does a max of 120 damage.

A bloodtinge build with a gemmed Evelyn and bone marrow ash can cheese every boss in the game you retard. Of course a brainlet like you who thinks the cannon is the strongest gun because it's the biggest, loudest and consumes the most bullet wouldn't catch on something this obvious and well documented.

50STR/50ARC/25SKL is a bad build unless you're dedicating it to Wheel/Moonlight GS while 50STR/50SKL/25ARC is a better "quality" build. ARC builds dedicated to elemental converted weapons and tools should get over 50 ARC since it scales well over 50 as opposed to STR, SKL and BLT.

Finding the "real world" hunter's workshop was eerie.
