I’m about to start MGS-V for the first time and I realized...I have no idea who “Snake” is. Or Big Boss. Or liquid snake. Or the “original” snake. And I have a feeling I will only get more confused after I’m a few hours in.

You play as a guy who has been brainwashed to believe he's Big Boss (aka Snake). He's a body double to keep people off of BB's back. Big Boss has a few younger clones running around. You don't actually play as Big Boss. This spoiler wouldn't bother you much considering you don't know shit about the MGS universe, and actual fans didn't even like the shitty plot twist.
His mommy figure that him and many other characters are crazy about, was known as The Boss. She was a sort of war hero legend who let herself be killed by Big Boss in MGS3 (it's complicated).
Just play for the gameplay. Put artificial restrictions / challenges on yourself in how you go about completing missions to make them even funner for yourself. It's about the journey.

Thanks for the help. So “Big Boss” is the original. And various other snakes are protagonists and characters in the other games. But aren’t necessarily aware of their clone status until they are.

Exactly. Solid Snake is the only other Snake you play as in MGS1, 2, and 4. His other two clone brothers are boss battles in those games.
The original Metal Gear games (without the Solid in the title) that were on NES, you play as Solid Snake and they feature Big Boss as a boss battle.

There is some shit that is supernatural and then there is some shit which merely appears to be supernatural. Sometimes it's hard to tell and I don't remember details well enough to get into them.
The Patriots are a sort of secret one world government (think the NWO conspiracy theory) that have control of some national governments and much of the economy (at least later on in the group's full reign of power)
Their goals are to enforce peace on the world through tyrannical means. Started out with good intentions but it was misguided and got corrupted. The Patriots started out as a group of people, but later on the will of those people no longer mattered as they created an AI to run things and that AI goes crazy (which you see and is explored in MGS4).
