That's straight up high fantasy. The way the floral/leafy stuff is modeled is really fucking cartoony.

Original demon's souls had that stuff but it was way more accurate and realistic and looked like out of a museum.

This is a texture from original demon's souls. Notice how the patterning is way more sophisticated and intricate, whoever did that shit in the remake isn't a proper artist.

there are shadows in that screenshots, even in the original the sun rays are mostly blocked by the fog. It's only in stonefang tunnel's first level where the sun is pretty clear.

Because all the details are overly enlarged and cartoony, large leaves and huge petal looking wings, the way the curley stuff is modeled everywhere has no mathematical basis it's just weird disney looking "hook" shit every average artist churns out when they first start making art. You can even see this shit on Tower Knight specifically his shield, the way the curley parts and wings are modeled is cartoony and cringe as fuck. The wings have no actual feather detail or anything.

Dark Fantasy can be combined with High Fantasy though, see MTG.

Flamelurker looks like a WoW demon, Tower Knight and his area look like some WoW raid area, the fluted armour set was changed from sporty maximillian armour to some kind of bastard cringe cartoony shit of a knight that doesn't look functional or anything.
