You can't carry gold bars. You can only package them into someone's body.

I took the gold bars, and at least 1 of every single item in the whole dlc, and then sneaked my way out locking that fucker in the vault forever, then hauled my massively overencumbered inventory all the way to the strip tower, later i did old world blues and for future playthroughs decided to use the sink as a home and just teleported there when i finished sacking the sierra madre

you don't even need to cheat or abuse the cut off bodyparts to do it, just grab everything and as soon as you tell elijah to come down start walking towards the other side of the room, half way there start sneaking and go all the way around almost reaching the forcefield door, never make LoS contact with elijah or he will see you no matter how much stealth you have, then just wait until he gets on the vault and make a run (super slow walk) for it, you will reach the forcefield before he does and it will close on his face
