the definition of soul is, when a developer puts something into a game that they didnt have to. something that improves the experience even though it would have been much easier/less expensive to just not do, but they did it anyway.
my go to explanation of SOUL is the end credits of OoT/MM, they could have just been white text scrolling over black background credits. but they put made a cute scene with all the characters from the games having a celebration

Soul means it means it has love poured into it and attention to detail, with the pure intent of making a good game and a fun experience, regardless of circumstances or limitations.
Soulless is when the devs treat is as a product to sell first and foremost, or if its a remake/sequel, they disregard the intentions and artistic vision of the original devs.

soul is putting effort into bringing your vision to life. profit coming second to quality. take Demon's Souls for example.
From knew it wasn't going to be successful. they knew this because King's Field only ever gathered a niche audience. yet they poured their soul into developing the game.
the remake is only cashing on the fact Souls is now a popular and profitable franchise, focusing on the graphical aspect and ignoring everything else, such as art direction.
art direction is a great way to measure soul in fact. games can be extremely technical and sometimes fail to realize the developer's vision, but art direction always reflects how much effort was actually put into the development. this is why the Mario 64 render is always brought up when people talk about soul.
if you can't understand the concept of soul vs soulless you're honestly an impressionable brainlet who takes everything at face value. ie, the presentation is all that matters. it's the reason why capeshit and modern Star Wars are worth millions.

It's easier to use painting as an example, as that is a far more developed medium than gaming. Basically though: soul=creative, soulless=noncreative
Hitler's art was considered a very true-to-life and technically proficient. Yet he was still rejected from art school. Why? Because it lacked soul. He was arguably excellent at repainting scenery, but there was no creativity. He didn't make anything that you looked at and pondered about.
The painting I attached is of the Vienna State Opera House. When you look at it, you likely think, "That's a good painting, looks realistic", or something along those lines. In the game world, this can be summed up as the difference between a soulless game like Call of Duty (a repeating simplistic game that offers nothing creative )to a soulful game like Pathologic (which breaks norms and pushes creative bounds aesthetically and with ludonarrative)
It either means the devs put effort in and it shows they were passionate about what they were creating, or THING I LIKE GOOD tier argument depending on the poster.
Art direction is the general look and artistic coordination that gives the game the feel it needs. Like, Call of Duty has a very realistic look, and all the elements, models, and UI design reinforce it. Persona 5 has a very stilized art direction, and because of that you can recognize it right away.
Art direction also makes the elements are compatible with each other.

If you've ever created anything, be it a work of art or some kind of writing that was actually in some way meaningful to you, then it has soul because you truly have poured your soul into making it. and this will be evident to people even when they are seeing it for the first time, or even when they don't even fully understand it
Likewise, when something is done forcedly, and the creator is just going through the motions, or only working for the paycheck, this too can become noticeable within the medium. it may seem as if it was created by a machine, and not a human. Soulless.
