There's no real stable version of DP1 but I recently replayed the game with the switch version and I had like 4 crashes throughout my playthrough and memory leaks make the game run like shit if you play for a couple hours at a time. It at least boots up with no real issue so in that sense its less of a hassle than the PC version.

The 360 version might actually be the definitive version

If you want stable you have to go for the 360 version either on the 360 or through BC on the Xbone. Switch is the most stable "Director's Cut" edition and it's not even the full Director's Cut since they took out the new cutscenes they added since they're not canon to 2.

The first looked like a developer genuinely trying to make realistic graphics in 2004. The fact that it was 2010 or whatever and had that early PS2 quality to it felt soulful.

Now it feels self-aware and trying to go for more of washed out artstyle. Not all the way soulless but it's leaning in that direction

Its both. You play as York before DP1 but you also play as a new character investigating someone 9 years after the first game. We don't know how these connect yet.

Kinda. The game takes place after DP1, but when you play as York, it's actually old Zach explaining one of his first investigations to the new FBI agent.

The 360 release is still the most stable version. Even more so if you play it on an Xbox One.

If you have a PS3, the original version of the game was also released on that but only in Japan as Red Seed Profile. The menus and text are japanese but all the voice work is in english.
