In multiplayer it seems you can play DLC stuff if the host has it so I think I'll hop around some lobbies and check everything out

Moose are an entirely different 'class' from the black/whitetail you're hunting. Check your ammo, it's probably class "4". You want class "6".
The taiga is great, definitely my favorite area.
And yes, if a server owner has the DLC, you can play it, but you won't get the story mission track to get you big exp/cash bumps (not that it really matters).
I'd highly recommend trying out the bow after you get comfortable with the game.
If you want a good, relatively quick source of exp/cash, I'd totally say to play yukon valley, and hunt red foxes. They're worth insane amounts of cash with a good shot, only require class 2 ammo (so you can use your default shit, or even your sidearm if you want to get bonuses) and don't track nearly as hard as things like turkeys.
The new map is also very good, and highly populated. They tend to make all the new reserves have increased spawn rates and lower range of vision/hearing for like a week without saying it to make people buy it so they get faster growth.
