Shadow of War is loads of fun when you crank the difficulty up to Brutal. Everyone gets massively increased damage and enemies attack faster, so you are really incentivised to manipulate the environment and be super sneaky to get the job done

I know there are others, but these jumped out at me first, and seem most essential. Dishonored had a lot going for it but never really clicked quite right with me, so taste will be a factor.

In the base game though I'd go with Clockwork Mansion. Much more freedom and interesting mechanics. Going non-lethal, undetected and with no powers on Very Hard is a genuine challenge.
Jumping timelines is great fun for the first run but you basically do exactly the same thing each successive time you do the mission.
