Lorkhan doesn't actually have a hard on for humans, this isn't a race thing to him. Ancestors of Aldmer and Protohumans were both Ehlnofey, the difference between them was ideological which later became biological. Any Ehlnofey that would join Lorkhan in war of metaphors manifest was welcomed by him, it was the fact that they got trapped in Alt Mora that turned them into humans later.
Of course now humans have predisposition to be Lorkhan biased because they are descendants of his warrior spirits, but an elf could pledge himself to Lorkhan if he truly believed it.

Is it ever specified when the Khajiit moon colonies became a thing? I think the Reman empire did it first. Also being a "spacefaring" race doesn't really mean anything since space is just Oblivion anyways and you can get there by using portals anyway
