Dark Souls is just "it's so hard omg xD" while Skyrim actually tries to be a fun and a solid game.

canonically, I think the elder scrolls would win, given the range of non-corrupting magic, the capability of how the empire is supposed to be and not how it's portrayed in oblivion, and all the other badass shit they've done. the dark souls universe might overpower tamriel in sheer numbers or giant, uncontrollable enemies though, but I still feel like the elder scrolls universe has more of a control

Dark souls was more enjoyable per minute, but Skyrim will be fun for much longer than souls, so I'll pick Skyrim.

Dark souls. Skyrim is alright for the first dozen hours or so, and then it's just the same shit over and over with boring combat, with the most efficient way to kill everything being to chug potions in a menu before and during combat. I finished it and explored extensively because I always feel obligated to finish games to a great degree of completion if not 100%, But it was a slog. Dark souls is short enough that it never begins to feel like a slog until you start doing multiple play throughs. A guy brand new to it can get like 40-50 hours out of new game, 70 if you suck like me. The bad or boring areas are short enough that it doesn't kill the whole vibe and enjoyment of the game. Combat feels way better than skyrim. Exploration doesn't become pointless like it does in skyrim, where you run your 2000th cave just for gold and shit items. And because dark souls is shorter, it's easier to get into playing new builds without as much of a time investment. Art direction, story and lore are also better in dark souls. Voice acting is a no brainer (except ds2, but ds2 a shit anyway).
Neither. Dragon's Dogma. Because it's the only worthwhile game out of the three.

Dark Souls is a 2 kewl 4 skewl tryhard game for people that think beating a difficult game is an actual life achievement.
Skyrim, as bugged as it may be, is still a game that you can sit down and unwind with.
Skyrim has rich lore, breathtaking atmosphere and amazing exploration, but shit gameplay.
Dark Souls has generic lore that's only accessible through item descriptions, generic dark fantasy atmosphere and meh exploration, but amazing gameplay.
Neither are particularly great, but as a game, I'd choose Dark Souls over Skyrim any day.

Let's compare soundtrack and character creation
I think both soundtracks have their merrit, but sound design definitely goes to DS, not because it is doing groundbreaking things, just that Skyrim very poorly mixes in the fight music, which ends up being such an earsore.
Character creation is arguably good for each, there are more body options in DS, which ideally Skyrim would also have but Skyrim does what it has to do with races being reflected in gameplay interactions, while DS's are purely cosmetic. I'd be interested to see Skyrim/ES with a wider array of body options like DS(Dragon's Dogma would be the ideal CC for it honestly), and on the flipside it would be interesting to see a future DS title have race options impact gameplay(Especially like Dragon Age Origins where your origin point changes based on your race choice). I think both games could have interesting benefits from having your race impact where you start in the overworld.
