Not for me. Post-apocalyptic settings are interesting because of the consequences, critical infrastructure like power grids or water and food processing would be decimated, society would be more anarchic, -- none of these things have any bearing in Minecraft, especially since you don't have to worry about resource scarcity. Two tiles of water give you infinite water, procedural generation gives you effectively infinite ores and stone, so I have a question for you.
What would even be different?
