The start of the game is very frontloaded with dialogue, but you get into the normal gameplay flow soon enough. Even then there's a lot of dialogue though, but it's balanced out with the dungeon crawling and fusion, and a lot of the dialogue comes from S. Links which feel like something you have a bit more freedom in as compared to the bits in the story where you're just going where it takes you.

original SMT3 Nocturne: only came out in japan
SMT3 Nocturne Maniacs (Just called SMT: Nocturne in NA): added a new dungeon, new demons and Dante from the Devil May Cry Series™. Only version localized in the west. It's the easiest to find.
SMT3: Nocturne Maniacs Chronicle Edition. Pretty much the same as Maniacs but swaps Dante for Raidou from SMT Devil Summoner. Also a Japan exclusive but there's an english patch based on the previous localization that also fixes some translation errors.

I'd go with Chronicles. Dante is a dumb meme and the fixes from the patch are minor but welcome.
I've only played the Maniax release but from what I understand the Maniax and Chronicle editions are identical outside of having either Dante or Raidou as a potential party members respectively. The latter has Pierce which makes him more useful for one of the game's final bosses but it isn't really necessary and if you need it that badly it's possibly to fuse it onto one of your late game demons. Maniax is also the only one with an official English translation while the latter has a fan translation that also fixes a few minor issues the original translation had (such as the menorahs being referred to as candelabra).
I'm a hardcore fan with P4, so many times I would even try to escape reality with lucid dreaming, I would be in Inaba where I would often train with Chie in the park and help Rise with the Junes Concert, but one day as I was talking to Rise, we went to my room for a private talk. She immediately said, "You know you could live with us forever.." I gave her a confused look and she continued, "We understand that you live on earth and you REALLY wish to live here".
