MM doesn't do shit like the webm, has actual swordplay, and has the rare extremely difficult portion.

It's an optional puzzle that acts as a shortcut back to the Great Sea. It's not meant to progress the game, it's just meant to let you go back to the Great Sea. That's why it's so easy. I agree that it would be better if there wasn't a puzzle at all, but I think the rationale was that they didn't want it to seem like Ganon's Tower just randomly had a way back to the Great Sea without you doing anything. Also, the webm uses the HD remake instead of the good version of the game.

Being optional doesn't make it not count, and it's 1 of 2 puzzles in the entire tower, barring the half the boss rush obstacle courses that are just "press switch" anyway. The port doesn't change this puzzle, so that doesn't matter either.

I loved Wind Waker at the beginning of the game, but towards the end it lost its magic for me. I wish there were more exciting places to discover, I found everything and filled out my map too quickly.

wind waker has sword skills you learn by turning in collectibles, and it totally does spell out puzzles, all zelda do except the first one, most likely due to technical limitation

yea my favorite part of the game was exploring the world and tracking down the triforce shards, I wish the game was all about that, maybe 40 shards, and multiple islands per square

You already know how purple chuchus and the iron boots work from their respective dungeons. There's nothing to think about beyond that.

The difficulty in MM just boils down to poorly designed dungeons like great bay or tedious parts like the ascent into stone tower.

Great Bay is only actually bad if you're a young child with no sense of direction, same as the Water Temple. The main difficulty comes in learning to fight enemies you can't just button mash to defeat, and there are lots of smaller things like the arrow minigames and the Snowhead moon section.

aestethically it was a great game.
but it was defiitely aimed for a younger audience.
enjoyable nonetheless.

It was aimed for the same audience as the earlier Zelda games, it just had a cartoony artstyle.
