Play Shadows of the Undrentide and Hordes of the Underdark.
As for the OP, I love Temple of Elemental Evil, Neverwinter Nights 2: Mask of the Berayer, and, while technically nod DnD, PAthfinder Kingmaker.
Also, sucks that we never got the Neeshka romance.

NWN2 is comfy af and feels like a tabletop adventure with bros not to mention it used the 3.5 ruleset.
Other DnD games either have no stories and are just gameplay (ToEE, IWD) or are pretentious and not self-aware (the BGs, PS:T).

Yes. SoU is good but short, HotU is even better and longer.
Just make sure you start with a new character, the expansion content is meant to be started with a completely new level 1
