They'll ignore you because you speak the truth Morrowind is boring when played ""properly"", it's not a matter of it being hard, it's easy as pie, anyone can master the mechanics, the combat is simply not satisfying. And messing around breaking everything also gets boring, this is supposed to be an RPG not a sandbox murderhobo game.
It's nigh impossible to not exploit the mechanics once you learn them, you have to limit yourself way too much. There are just too many ways to break the game. Bound Battle-Axe in early game, the Creeper shopkeep in Caldera, alchemy as a whole, jumping on top of an enemy and killing him from above because their AI is so shitty they can't kill you, kiting enemies slower than you with a spear, trying to ignore the fact you know where all the powerful items are located, taunting Vivec guards and killing them to loot their stuff, the list goes on.
I have no idea how you "roleplay" in this game when you know how everything works. It's a game best played as ignorant as possible.

Go learn the mechanics of Dota 2 or any Touhou's game attack patterns and bosses and see if that makes you better at both games, guess what, it doesn't. Because even if you know how shit works, your reflexes and ability to think quickly should be still challenged, Morrowind's combat is braindead in that sense.

classes don't really determine much on your character other than how annoying leveling will be.
when you finally figure out how stat bonuses work for leveling you'll enter min-max hell
I would do something like the others recommended and go with fighter. Lady if you want heavy or medium armor, steed if you want light armor. Also pick up Athletics, as the game is considerably slow. Or you can get that mod to increase the running speed a bit.
