There used to be only 7 Big Bang Bars, but Gene Cunnigham made 110 more. A different company might make more at some point.

I just absolutely love the aesthetic showcases in the original Metal Gear Solid: Rising trailer.
There are only 11 (or so) Kingpins, but a new company bought the rights and is planning to make more, with new and improved code.

BioShock 2 when you got to go back through a sunken Fort Frolic and we had underwater combat (harpoon gun and every plasmid changed functionality to an underwater component). Plus there was only one Big Sister which changed tactics as it re-encountered you throughout the game.

Shadow of the Colossus had a shit ton of cut content, including 8 more colossi that you would've been able to fight. As a matter of fact, there are a crap ton of unused areas in the game that you can glitch out of bounds to find; about twice as large as the normal world map.

Apart from what has already been named in this thread I'd say Fable and Project Ego builds.
They really where throwing shit at the wall and had to scrap most of what they have which is both a shame and really interesting.
