MGS3 > Peace Walker > MGS5GZ > MGS5PP >MGS1 > MGS2 > MGS4

But still play it in release, that’s just the chronological order of what you will see.

what are the substance versions?

Start with mgs 1 for the GameCube it's slightly different than the original ps1 version

MGS2 substance and MGS3 subsistence are the versions inluded in the HD collections. (More VR missions in 2 and a new camera in 3). Just dont buy the original ps2 games with the titles "sons of liberty" and "snake eater".
