lock picking was easy and fun

I used to hate this when I was a kid, but it's the best lockpicking compared to the garbage in Fallout and Skyrim.

this is when i realized bethesda was dead to me

I can't imagine playing without mods that let you force locks successfully every time. It's a fun minigame if it happens occasionally but with open world design and chests everywhere it becomes a chore and half the time the rewards are so bad it feels like a waste opening it.

the one is skyrim I think is dumber because not completing the quest and just keeping the skeleton key is more valuable than the actual quest reward

the lock system in Skyrim should be simpler because Nords are stupid

Hacking/lockpicking minigames comes in all flavours. The Oblivion lockpicking had more components but there is no effective difference. As soon as you could remember the tempo you could lockpick anything the game let you. No different from Skyrim or, say, Fallout 3 or whatever.
I can't actually think of many game that actually increase the difficulty.

Most real life criminals never bother with actual lockpicking precisely because it is too time-consuming and requires skill. It is far easier to just bash the door or to steal the keys.
