The only thing that breaks immersion in those and ES is Bethesda's shit animations and models. It's like they got people that peaked in '95 working on all their games.

Is it possible to get immersed in Call of Pripyat or will it feel too dated?

Depends. Yeah if it's dragons replaced with Thomas the tank engine and everyone is a tranny with huge tits then yeah it break immersion. But I did a play through recently of New Vegas with some great animation mods, mods that made the pacing of combat more slow, cover dependent and generally more realistic, some graphical mods that in my opinion overhaul the atmosphere of the game without changing the basic "feel" of it and I gotta say I really just miss being in that world.
