I invaded the same guy 5 times in a row once and he kept pulling the plug every time I killed him. He wouldn't even pull it when I entered, he tried to fight me every time and kept losing. Eventually I got paired with someone else.

I only played Dark Souls 1 but I remember that invasions only happened if you went out of your way to do things in the game that would allow them to happen, they didn't just happen from the start of the game. In addition, you can just play in offline mode anyway.
