You know that's a pretty good argument that rarely gets brought up. Why would the boss be the 1st star and not the 6th or even the 5th?

To give impression that the game is better than it is. That it actually has bosses quite often. It is also to ensure that noobs will encounter them anyway.

When I first played this game at like 8 I kept throwing him off the cliff and didn't understand why it didn't work, then when a friend showed me the right way I thought it was retarded, because why the fuck would just dropping him on the ground do damage when throwing him off the top of a mountain didn't?

That makes me wonder if that was intentional. Perhaps you’re meant to traverse the whole level so that you inadvertently stumble upon a star before getting to the boss

When you defeat a boss the level becomes symbolically ‘yours’, and you spend the rest of the missions exploring your conquered territory more thoroughly as you continue to establish dominion over it.

It's completely intentional. The first star usually gives you the grand tour of the level, and the rest tend to be detours/secrets. But like you say, there's nothing to stop you exploring even while you're looking for that first star. It offers complete freedom, and is what was so refreshing about it at the time.

You know that’s actually a fair criticism, it makes no sense. Doesn’t really teach you any important gameplay lesson either, and since the star always flies to the same spot it shouldn’t make a big difference if he dies at the bottom or top of the hill.

Throw in the 2 bullies and the ice bully as minibosses if you want.

That's actually a minor design flaw, but you walk really slow when holding him so your first thought wouldn't be that of walking all the way to the edge and throw him off, most of the arena's edge is over a very low difference in altitude between the arena and the path that gets to it. Correct
The first star you're supposed to do is the boss one in BOB, WF, and BBH, plus the big bully one in LLL. Eyerok is a secret boss, wiggler isn't but he's more of an optional boss, same for the ice bully.
