How do you sort your physical games? Do you keep all of one series next to each other despite them being different platforms, or do you keep everything separated by platform? Or do you sort them alphabetically?

Separate by platform, sort by date of purchase, old > new. Even sequels on the same platform as the last game don't go next to it. Strictly date of purchase.

Sorted by platform, developer or publisher and by when I get them. So for instance Bloodborne is next to Dark Souls 3 and Sekiro.
To preserve memories of where I was and what I was doing at points in my life
All trophies have a time and date so that would give you a more informative timeline of what and when you were playing

I just started collecting so it'll be awhile before I can match that. Especially with PS1 games getting around $100.
Your discs and carts will break and rot. When that happens, the publishers send you a new copy right? No? Oh, I guess putting the data inside a piece of plastic doesn't mean you own it. You will waste all your money that could be put to better use. Meanwhile I will always be able to play any game I want any time I want. I can play any game you have. The most prized entry in your collection is completely worthless.

Look up what the most valuable games are. They're all some of the worst games in existence. Valued purely for being "rare" even though the actual game is garbage. Collectors don't give a fuck about games, because they get more satisfaction from putting shit on their shelves. I bought some expensive as fuck games and I sure as hell played them. Yeah, collectorfags that buy them solely to put on the shelf are absolute scum but that's not every single person that buys videogames.
I just go by platform and genre, mixed with a bit of chaos sorting that only I know based on what games I'm more likely to play more than once or personal favorites for easier access.

I love collecting for ds and 3ds but i can’t do the same with GBA because the market is full of bootlegs and fake boxes i fucking hate it, i only have 2 gba games in my collection pokemon emerald and and advanced wars and they are complete in box with their manuals i don’t know why retards trew their boxes away
Why is it so much harder and expensive for western releases? You can get Japanese versions of the same games on SFC and GBA for reasonable prices.
