Because that would be fucking retarded. Imagine a talking horse showing up in cutscenes and offering their opinion about the conflict and the best course of action. Imagine fucking talking horse Epona of all things appearing alongside the already enormous cast of characters and, as the player, having to pretend to take it seriously.
