Sword Saint was absolutely impossible, until it wasn't. It was crazy. I genuinely felt like I would never be able to beat him and then suddenly everything just clicked and I fucking smashed his ass. Souls bosses are incredible.

It is a bad boss fight.
First off it's a gank fight which never works well with the Souls combat.
Secondly it's glitchy af. Ornstein zooms around gets stuck on the pillars or in smoughs arms like a retard and the animation never looked good. Ornstein can attack you with his spear through Smough which is such bullshit.
There are better designed bosses in DS1 and DS1 has a horrible collection of bosses.
